Falafel
Ingredients:

2x 400g chickpea cans, drained and rinsed

1 small onion, chopped

2 tsp. ground coriander

2 tsp. ground cumin

6 tbsp.flour

Juice and zest of 1 lime
Method:

Preheat the oven to 160°C.

Put the chickpeas, onion, spices, lime juice, lime zest and flour into a food processor and process coarsely.

Using a tablespoon scoop up some of the mixture and shape into a ball using wet or floured hands. Repeat with the remaining mixture. You should end up with 20 – 22 balls.

Place the falafel balls on a lightly oiled over tray and bake in the oven for 20 - 30 minutes or until golden. You may need to flip all the balls half way through so they get a little brown on both sides. Serve with mint yoghurt, tabbouleh and some roasted pumpkin.
I've made falafel balls twice, both times I've stressed out so much so that I don't enjoy eating them, but everyone else enjoys eating the ones I make, so I must be doing something right...right?!
I stress because all the recipes in all the books and all the sites say to fry the balls...but when I fry them, they fall apart in the oil and just turn to a goopey mess. (This doesn't make sense to me because when I make pakora's, I use a chickpea batter and it holds the veg together).
I looked up how Jamie Oliver cooks his falafel balls (because when all else fails, Jamie has the answer). He puts them in a frying pan with a tablespoon of oil and browns each side. Why didn't I think of that?!
Anyway, I thought of baking them in the oven and it worked!! They held together and they are much healthier because they're not deep fried. Next time, yes I will make them again because I like strangely enjoy stress, next time I'll try them in the fry pan.
I stress because I'm a perfectionist and because I'm stubborn. One day I'll figure out how to fry them without the balls falling apart!

Once I saw a blog had posted a picture of the plate once the food was all eaten. This is my plate...not sure if I will continue posting pictures of used plates. I don't see the point of it. What do you think? The colours were pretty!
