Aloo Mutter

(Potato & Pea Soup)

 

 

 

 

Ingredients:

  • 3 tsp. garam masala*

  • ½ tsp. turmeric*

  • Half of ¼ tsp. hot ground chili

  • 2 tsp. cooking salt*

  • 1 cup frozen peas

  • 3 medium potatoes

  • 1 medium red onion

  • 1 clove garlic

  • 1 thumb size piece ginger

  • 2 medium tomatoes, roughly chopped

  • 3L of water
     

*leveled with a straight edge knife

 

 

 

Method:

  • Wash and peel the potatoes and cut them in half and then into small quarters. Wash again to get rid of any extra starch and so they don’t go black and set aside.

  • Peel the onion, garlic and ginger and chop them up roughly. Place them all in a mini food processor and process until it’s a paste like consistency.

  • In a large pot sauté the onion mixture until caramelised.

  • Add in all of the spices and mix. Roast the spices through until aromatic.

  • While step 2 and 3 is happening process the chopped tomatoes in the mini food processor until it’s a soup consistency. Add the tomatoes to the spice and onion mixture and mix until combined. Cook until it’s a thick gravy consistency.

  • Add in the peas and heat through for about 1 minute, then add in the potatoes and stir through until all the potatoes and peas are coated in the spices.

  • Add about 2L of water into the pot with the potatoes and peas and cook on a medium heat for about 20 minutes. (If the soup still tastes like water then turn the heat up and boil rapidly until the soup thickens).

  • Enjoy with roti or basmatti rice.
